Where do Red Hook residents go when they need to shop at a mall or "big box" store?

As you probably know, there aren't any in Red Hook, so the closest place to go is Kingston. There's the Hudson Valley Mall on the other side of the Kingston-Rhinecliff Bridge. The downside is that you'll have to pay a $1.50 toll coming back, but it's definitely the closest option. You could probably get there in about 15 minutes or so. Poughkeepsie is much farther away so I'd imagine it's less popular amongst Red Hook residents.

Yeah, Red Hook has slim pickings when it comes to shopping. Kingston is probably the closest, though it's still a bit of a drive and you pay that toll. Poughkeepsie is a better choice in my opinion, though trips would be fewer and farther between.
