What's the best organic restaurant in Pueblo?

Unfortunately we don't have any completely organic restaurants. There used to be a vegetarian, organic coffeehouse, but they went out of business earlier last year. It was a little bit devastating.

However, the Daily Grind is another coffee shop / cafe that uses a lot of organic and local ingredients. Shamrock Brewing Company is a restaurant and brewery, and most of their meat and fish come from local farmers.

I've heard of an organic restaurant called Ambrosia Organic Kitchen, off of Colorado, but I've never been there and I'm not sure if they're still in business.
