I'm not sure it counts as something that's particular to Pueblo, but the Colorado Highway of Legends (Hwy 160) passes through Pueblo's south side. It takes you down through Walsenburg, the Spanish Peaks, and eventually loops around back to Trinidad. All in all it's about a two hour drive, and it's well worth it. Beautiful views, but also a ton of history, memorials, and museums along the way.

If you'd like to stay a bit closer to Pueblo, Liberty Point in Pueblo West is a great place to park and watch the sunset. The outlook gives you a view of the whole of Lake Pueblo.
