Is East Fishkill generally pretty safe?

Very much so. Having taken a peek at the crime statistics, they're well below the state and national averages in every category. Speaking for myself, I have never at all felt threatened or in danger in Hopewell Junction and I suspect most of its residents feel the same way.

It's definitely safe enough of a town in which to raise a family in peace.
