I am a very big fan of The Palm Located in the Weston Hotel in Downtown Denver. Also a fan of Capital Grille on Larimer St in Downtown. Both are great steakhouses, can be very pricey, but you cannot beat the steaks. Outside of the Downtown area I also like Elway's in Cherry Creek and Flemings in the DTC area. Another steakhouse that you might be thinking about with the different types of meat is The Buckhorn Exchange. It is the oldest steakhouse in CO and serves every exotic kind of meat you can think of; elk, rattlesnake, quail, buffalo and even alligator.

I am a fan of Texas de Brazil in Stapleton Northfield. This is a Brazilian style steak house. The have several different types of Steak, Chicken wrapped in bacon, sausage, Lamb chops and others. I am getting hungry just thinking about it. The meals are all you can eat, the salad bar is great. It is priced around $40. My favorite is the Picanha which is a prime cut of top sirloin. I would and do recommend this place if you want good steak and great atmosphere.

I always look for locally owned / family owned restaurants when I'm out, so I personally like Prime Steakhouse. It's definitely high-priced (especially if you're planning on buying a steak), but it stands head and shoulders above chain restaurants as far as quality and choices.
