Coffee
At the home of Starbucks, do you coffee from chains or from independent providers?

It's chains. Wherever you go there is a Starbucks, or a Seattle's Best (which is owned by Starbucks), or a Tully's. Typically if there is an independent coffee house, it's actually a stand, or it's in a school. There is one semi-chain that I prefer to all the others, they're called Uptown Espresso. I think they're delicious and they have the best foam I've ever had the pleasure of slurping.

Uptown is good if you are a foam person for sure. If you are a naturalist and want a more "real" tasting coffee...I'd suggest Macrina Bakery, you might also try Stumptown. Also a few mom and pop shops that I enjoy are "Broadcast Coffee" in the Central District (20th and Yesler) and "Bedlam" in Belltown (2nd ave and Bell st)

Independent Providers. The coffee is way too good out here to suffer mediocre coffee from a large chain.
My recommendations as of 10/2013:
Espresso Vivace for the smoothest cappuccino you've ever tasted
Slate Coffee Bar for a serious (but very friendly!) coffee experience for serious coffee drinkers (they serve flights of coffee)
Tougo Coffee Co for great coffee with a kid-friendly atmosphere
Moore Coffee Shop for the best coffee within a 10 minute walk of Pike Place
